Are you hosting a Super Bowl Party? Looking for something easy

to make and take? This recipe turns smoked salmon into finger

food!   (Makes 16)

8 each         Eggs

1 TBL.Capers

2 tsp.  Salt

2 TBL.         Mayonnaise

2 tsp.  Dijon mustard

1/2 tsp.        Dill, fresh, chopped

1/2 tsp.        Chives, fresh chopped

2 oz.    Smoked salmon

Put eggs in medium sauce pot and add enough cold water to cover by 1 inch.  Add

salt, simmer over medium high heat for 12 - 15 minutes.  Reduce heat to medium

low for 9 minutes, then pour off water in pot. Run cold water over eggs for 3

minutes. Peel shells, cut lengthwise and scoop out egg yolks into small bowl,

reserving egg white shells. To yolks add mayonnaise, mustard, salt and mix well. 

Fold in capers, dill, chives and smoked salmon.  Spoon filling into hard cook egg

whites. Garnish with dill and serve.
